<p>Boller i karry er mange børns livret, og netop retter med karry burde  indgå i kostplanen for enhver, der ønsker at bevare sin hukommelse. Det  fremgår ifølge Daily Mail af ny amerikansk forskning, der viser, at  indtagelse af karry et par gange om ugen er et effektivt våben mod  demens og Alzheimers.</p>
<p>Professor Murali Doraiswamy fra Duke University i North Carolina, der  står bag de nye forskningsresultater, har fundet ud af, at</p>
<p>, som er en komponent af krydderiet gurkemeje og  som findes i karry, kan hjælpe med at styrke vores hukommelse.</p>
<p>Forklaringen er, at gurkemejefarve forhindrer spredningen af de  skadelige såkaldte &#8220;amyloid sponsorplader&#8221;, som man finder i hjernerne  hos personer med Alzheimers. Forskerne antager, sponsorpladerne spiller  en central rolle i symptomer som hukommelsestab og psykiske handicap.</p>
<h3>Kliniske forsøg</h3>
<p>&#8220;Undersøgelser af forskellige befolkningsgrupper viser, at mennesker,  der spiser et karrymåltid to eller tre gange om ugen ser ud til at have  en lavere risiko for demens,&#8221; siger professor Murali Doraiswamy, der  netop har fremlagt sine resultater ved Royal College of Psychiatrists  årlige møde.</p>
<p>Ifølge professoren vil hans forskning nu blive fulgt op af kliniske  forsøg på universitetet i Los Angeles. Her vil man teste curcumins  effekt på patienter med Alzheimers.</p>
<p>Han forudser også, at det vil blive muligt at lave en karrypille, som  har den samme gavnlige effekt på demens og Alzheimers.</p>
<p>I Indien er der en ganske lav forekomst af Alzheimers. Forskerne ved  ikke hvorfor, men et godt bud er karryen, som bliver brugt flittigt som  krydderi i det indiske køkken, mener doktor i biokemi Susanne Sørensen  fra Alzheimers Society.</p>
<p>&#8220;Vi er meget interesserede i at udforske, hvorvidt curcumin kan beskytte  hjernen. Karry vil være en sikker og let tilgængelig behandling, som  kan forbedre livskvaliteten for tusinder af mennesker,&#8221; siger hun til  Daily Mail.</p></blockquote>

<p><span style="font-size: medium; font-family: comic sans ms,sans-serif;">Det betyder ihvert tilfælde at herværende blogejer nærmest må være immun over for de 2 sygdomme, da jeg alle dage har været vild med karry og har indtaget uanede mængder af krydderiet!</span></p>

<h2>AWABI NO SAKA-MUSHI</h2>
<p>Snegle kogt i risvin &#8211; (6 personer)</p>
<p>Der anvendes ofte risvin til fisk og skaldyr og kød, før det koges for at frembringe en finere smag. Denne ret serveres sædvanligvis med en lys grøn sauce fremstillet af tangblade, som ligger i sneglens mave. Men vi har valgt at frembringe en anden slags sauce.</p>

<li>6 friske snegle i sneglehuse<br />
Salt<br />
60 ml Sake (risvin)</li>
</ul>
<p><strong>SAUCE</strong></p>
<ul>
<li>5 g tørre tangblade</li>
<li>1 spsk. mayonnaise</li>
<li>1 tsk. lys sojaolie</li>
<li>180 ml vand</li>
</ul>
<p>Udtag sneglene af sneglehusene og fjern alle overflødige ting, som ikke skal med. Gnid sneglene med salt og skyl dem grundigt under rindende koldt vand. Rids lidt i overfladen og læg sneglene tilbage i sneglehusene.</p>
<p>Læg sneglene med bunden i vejret på en rist over kogende vand. Hæld risvin hen over sneglene og læg et tætsluttende låg over og lad det koge i 2 timer, indtil sneglene er bløde og påfyld mere vand om nødvendigt undervejs. (Kogetiden kan variere afhængig af størrelse og kvalitet af sneglene). Fjern sneglene og udhæld væsken fra sneglehusene. Udskær hver enkelt snegl i mindre strimler og læg dem tilbage i deres sneglehuse.</p>
<p>Saucen fremstilles ved at lægge tangbladene i en mindre stegepande og hælde vand ved. Lad tangbladene blive bløde og lidt større, hvorefter det koges videre i ca. 6 minutter, indtil de er helt blødgjorte. Pres tangblade igennem en si med nok af væde, så det bliver til en tynd pasta og tilsæt mayonnaise og sojaolie og bland det hele godt. Brug en ske til at hælde saucen hen over hver snegl.</p>

<p>Kylling i kogt risvin med sauce fra sesamfrø &#8211; (4 personer)</p>
<p>Den fine smag af Sake (risvin) og sesamfrø er godt tilbehør til møre kyllingebryster. Knust, ristede sesamfrø eller sesamsmør (tahini) fra Mellemøsten benyttes til at fremstille saucen – selv om blød peanutsmør også kan anvendes – men er måske ikke helt så autentisk.</p>
<ul>
<li>2 hele, udbenede kyllingebryster (ca. 625 g alt i alt)</li>
<li>155 ml Sake (risvin)</li>
<li>Salt</li>
<li>45 g ristede, hvide sesamfrø eller 3 spsk. blød peanut- eller sesamsmør</li>
<li>60 ml tangblade i fiskelage</li>
<li>1 ¼ spsk. mørk sojaolie</li>
<li>¾ tsk. sukker</li>
<li>1 tsk. riseddike</li>
<li>¼ tsk. salt</li>
<li>Lemonskiver</li>
</ul>
<p>Brug en skarp kniv til at gennemskære kyllingebrysterne i tætte snit. Læg kyllingebrysterne med skindet opad på et fad og sæt det i en dampkoger. Sprøjt risvin og salt hen over kyllingebrysterne og kog det langsomt i ca. 20 minutter.</p>
<p>Knus sesamfrøene til en blød pastalignende konsistens i f.eks. en krydderiknuser eller morter. Rør de forskellige ingredienser i pastaen – undtagen lemonskiverne – for at frembringe en tyk sauce. Fjern kyllingebrysterne fra varmen og lad det blive afkølet. Læg film over og sæt det i køleskabet.</p>
<p>Skær fileterne diagonalt i smalle strimler. Læg det på en tallerken eller to og hæld saucen hen over kyllingebrysterne. Pynt retten med lemonskiver eller peberrod, så det kommer til at se indbydende ud!</p>

<p>Kyllinge- og risgryderet -  (6-8 personer)</p>
<p>Tori Gohan eller “kyllingeris” hører til kategorien risgryderetter – en ret bestående af ris med kød, æg eller pyntet med grøntsager – en hurtigt tilberedt ret helt i japansk stil.<br />
Restauranter der serverer risgryderetter er meget populære i det meste af Japan, hvor det er muligt at få hurtigt tilberedte og ikke så kostbare retter serveret, og hvor portionerne ikke er så omfangsrige. Betegnelsen risgryderet beskriver rent faktisk en skål, hvori maden serveres. Det er en risskål i overstørrelse, som sædvanligvis har en flot fod som støtte.<br />
Risgryderetten kan serveres som tilbehør, frokostret eller hovedret, men serveres også ofte som afslutning til et større måltid i stedet for at servere almindelige hvide ris.</p>
<ul>
<li>500 g kyllingekød, fortrinsvis kyllingelår uden skind</li>
<li>125 ml lys sojaolie</li>
<li>2 spsk.. Sake (risvin)</li>
<li>60 g sukker</li>
<li>500 g rå, mindre hvide ris</li>
<li>8 tørrede japanske sorte svampe eller champignoner opblødt i vand</li>
<li>1 ¼ liter tangblade eller anden form for grønne alger i fiskelage (*)</li>
<li>155 g frosne, grønne, optøede ærter</li>
<li>Salt</li>
</ul>
<p>Skær kylingekødet i mindre stykker eller strimler og læg kødet i en skål med sojaolie, risvin og sukker. Bland det hele godt og lad det stå og trække i ca. 25 minutter.</p>
<p>Skyl risene grundigt og lad vandet dryppe af. Læg risene på en mellemstor stegepande med tyk bund og tætsluttende låg og stil det lidt til side.</p>
<p>Rens svampene og læg dem på et fad, hvor de opvarmes ca. 2 minutter, indtil de er blødgjorte, afskær derefter stilkene og findel hovederne. (Man behøver altså ikke altid at opvarme svampene).</p>
<p>Læg kyllingekød og svampe oven på risen, hæld væsken (blandingen af sojaolie, risvin og sukker) over. Spred derefter de frosne ærter hen over portionen. 2 tsk. salt fordeles jævnt over retten.</p>
<p>Læg låg på og kog portionen op til kogepunktet, skru derefter ned for varmen til et lavt blus, og lad det stå og simre, indtil ris og kylling er mørt og væsken er absorberet.</p>
<p>(*) ELLER brug Dashi (japansk fiskegrundsuppe) eller små gryn, som er<br />
udvandet lidt mere end normalt.</p>

<h2>TORI NO MIZUDAKI</h2>
<p>Klar suppe med kylling og porrer &#8211; (6 personer)<br />
Samlet set kendes suppe i Japan som klar suppe men findes i to forskellige kategorier. Det er en lys og klar suppe, som ikke ligger langt fra smålune retter, der som regel blot kaldes klar suppe. Tykke supper krydres sædvanligvis med gul sojaolie, hvorved de får en mælkeagtig okkerfarve.<br />
Suppe serveres som regel som forret og altid i en skål med låg, som sædvanligvis er fremstillet i lakeret træ. Det er meningen, at suppen spises under hele måltidet ved at tage en skefuld ad gangen – lidt ved siden af selve hovedretten.</p>
<ul>
<li>185 g kyllingebryst eller kyllingelår uden ben</li>
<li>3 japanske løg eller tynde porrer</li>
<li>1 liter lys kyllingelage</li>
<li>1 ½ spsk. lys sojaolie</li>
<li>1 spsk. sød hvidvin</li>
<li>Salt efter behag</li>
<li>Citron- eller lemonsaft</li>
<li>6 skiver citron eller lemon</li>
</ul>
<p>Udskær kødet i 12 lige store stykker. Skindet skal sædvanligvis blive siddende på kødet men kan godt fjernes, hvis man synes, at det er nødvendigt.</p>
<p>Afskær rod og løse dæksblade fra løg eller porrer og udskær dem i ca. 15 cm længde. Porrerne skal skylles grundigt under koldt rindende vand. Skær hvert stykke halvt over på tværs og derefter i kvarte stykker og gennemskær stykkerne midt igennem, så de danner en spids. Læg dem lidt til side.</p>
<p>Opvarm kyllingelagen til kogepunktet i en dyb stegepande. Læg kyllingerne på stegepanden og lad det simre svagt i ca. 15 minutter. Tilføj porrer, sojaolie, hvidvin samt salt og lad det simre, indtil kylling og porrer er tilpas gennemkogte.</p>
<p>Brug en hulske til at tage kyllinge- og porrestykker over i en suppeskål. Fjern evt. skum fra overfladen af suppen for at fjerne overskydende fedt; løft det fri af suppen og bortskaf fedtet. Tilføj citron- eller lemonsaft alt efter smag (skal helst være lidt skarp i smagen) og hæld suppen over i suppeskålene. Læg en skive citron eller lemon som dekoration over retten og server det hele.</p>

<h2>YU DOU T’ONG</h2>
<p>Fiskebollesuppe &#8211; (6 personer)</p>
<p>Små fiskeboller, rejer, krabber eller blæksprutte anvendes for det meste i kinesiske retter. I kinesiske byer kan dette købes færdiglavet til brug i supper til retter, som skal omrøres eller grydesteges. Men det kan sagtens lade sig gøre at lave det selv i sit eget køkken – når man har en foodprocessor, er det meget nemt. Den traditionelle metode er, at reducere de forskellige ingredienser til en masse vha. et fladt køkkenværktøj i f.eks. træ; når det hele er helt mørt og udrørt æltes det og presses sammen og tages ud af fadet for at vende rundt på det for igen at ælte det lidt, indtil blandingen er helt blød, klæbrig og let i sin form. Når det blandes sammen, skal det altid foregå i samme retning for ikke at selve blandingen kommer til at blive skilt ad.<br />
Kineserne har en meget effektiv måde at lave helt runde boller på ud fra denne bløde og lidt våde konsistens: En håndfuld af blandingen løftes fri af fadet, hvorefter en lille portion klemmes mellem tommel- og pegefinger. En lille kinesisk porcelænsske bruges til at skrabe bollen fri af hånden, bollerne bliver efter god træning altid fuldstændigt runde i deres form.</p>
<ul>
<li>345 g hvid fiskefilet</li>
<li>1 spsk. risvin eller tør sherry</li>
<li>1 spsk. revet frisk ingefær</li>
<li>2 spsk. meget fint hakkede forårsløg</li>
<li>125 ml kold vand</li>
<li>¾ tsk. salt</li>
<li>1 æggehvide</li>
<li>2 tsk. stegemargerine eller planteolie</li>
<li>1 ¼ spsk. majsmel</li>
<li>1 ¼ liter fiske- eller kyllingelage</li>
<li>1 forårsløg</li>
<li>45 g syltede sennepsblade</li>
<li>2 spsk. meget fint udskåret saltet skinkekød</li>
</ul>
<p>Udskær fisken i små terninger og læg dem i en foodprocessor. Hæld vinen i. Læg ingefær og de fint udskårne sennepsblade på et rent viskestykke og klem det hen over fisken for at få portionen til at afgive så meget væde som muligt. Tilføj koldt vand og salt, indtil blandingen er blød og lækker. Tilføj æggehvide, stegemargerine eller planteolie samt majsmel og giv det en ekstra tur i blenderen.</p>
<p>Bring en stor gryde med vand til kogepunktet. Form fiskebollerne som beskrevet ovenfor og lad dem dumpe ned i vandet i gryden. Lad det simre indtil bollerne flyder op til overfladen i gryden og giv det herefter ca. 2 minutter mere varme. Fjern bollerne fra gryden vha. en hulske og bortskaf vandet.</p>
<p>Hæld fiske- eller kyllingelage i samme gryde og bring det til kogepunktet. Rens og udskær de forårsløgene og de syltede sennepsblade i fine strimler eller stykker. Læg skinkekød og fiskeboller tilbage i gryden og lad det simre lidt. Retten kan serveres med det samme.</p>

<p>Kyllingeboller simret i sauce  &#8211; (6 personer)</p>
<p>Disse meget bløde kyllingeboller kan serveres på to måder: Som suppe i lage eller som hovedret med ris i sojaolie iblandet lidt risvin.</p>
<ul>
<li>500 g kyllingekød</li>
<li>125 g hvide fiskefileter</li>
<li>2 æggehvider</li>
<li>1 helt æg</li>
<li>60 ml Sake (risvin)</li>
<li>2 spsk. mørk sojaolie</li>
<li>1 spsk. ingefærsaft (riv frisk ingefær på et viskestykke og pres derefter væden fra)</li>
<li>2 spsk. sukker</li>
<li>1 ½ tsk. salt</li>
<li>10 cm rektangulære tangblade</li>
<li>Forårsløg</li>
</ul>
<p><strong>SAUCE</strong></p>
<ul>
<li>750 ml tangblade i fiskelage</li>
<li>180 ml Sake (risvin)</li>
<li>125 ml sød hvidvin</li>
<li>60 ml lys sojaolie</li>
<li>2 ½ spsk. majsmel</li>
</ul>
<p>Afpil skindet fra kyllingen og hak det i lidt store, grove stykker. Udskær fiskefileten i terninger. Læg begge ingredienser i en foodprocessor eller blender og tilføj æggehviderne, det hele æg, risvin, mørk sojaolie, ingefærsaft, sukker og salt.<br />
Lad det hele køre igennem foodprocessor eller blender, indtil det hele har en passende konsistens, derefter tilføjes 3 spsk. iskoldt vand, hvorefter foodprocessor eller blender igen skal køres for at gøre det hele lidt lettere og mere fyldigt. Alt dette tilberedes sædvanligvis i en lerskål med rimelig rå inderside og sammenrøres med en tyk støder (f.eks. som i en morter).</p>
<p>Bring en stor gryde vand til kogepunktet. Aftør tangbladene med en fugtig klud, hvorefter de ridses på begge sider med en kniv for at frembringe en god duft. Læg tangbladene tilbage i gryden og skru op, indtil det småkoger.</p>
<p>Tryk kyllingepastaen sammen til små boller og læg dem ned i det varme vand. Giv dem ca. 5 minutter, eller indtil de kommer op til overfladen.</p>
<p>Hvis retten serveres som suppe tages bollerne op med en hulske og lægges i suppeskåle. Læg tangen hen over sammen med forårsløg.</p>
<p>Det er også muligt at tage kyllingebollerne op og lægge dem til side, hvorefter vandet bortkastes. Læg tangblade, risvin, hvidvin og lys sojaolie i en stegepande og bring det til kogepunktet. Læg kyllingebollerne i og lad det simre ved svag varme i 4-5 minutter. Fjern kyllingebollerne fra stegepanden og sæt dem til side. Bland majsmelet med lidt koldt vand og rør det i saucen. Lad portionen simre under omrøring, indtil saucen er lidt tyk og klar. Hæld saucen over kyllingebollerne og server retten sammen med ris.</p>

<p>Grydestegte kødboller af svinekød &#8211; (6 personer)</p>
<p>Disse middagsstore kødboller har sædvanligvis betegnelsen “Løvehoveder”. Det er en fyldig ret, hvor “Løvehovederne” skal være møre nok til at kunne deles med en enkelt spisepind. De placeres på midten af bordet, hvor alle kan gribe ind ved at afsnuppe nogle småbidder af kødbollerne, hvor man også kan tage et kålblad sammen med kødbollestykket og skylle det ned med en skefuld af den fyldige kødsuppe fra sin tallerken. Hvide ris samt stærke, syltede grøntsager serveres til, så hele den velsmagende herlighed altid huskes!</p>
<ul>
<li>750 g revet, magert svinekød</li>
<li>2 spsk. findelte forårsløg</li>
<li>2 spsk. findelte bambusskud</li>
<li>1 tsk. frisk, findelt ingefær</li>
<li>1 ½ tsk. salt</li>
<li>⅓ tsk. hvid peber</li>
<li>1 spsk. risvin eller tør sherry</li>
<li>1 spsk. lys sojaolie</li>
<li>2 spsk. majsmel</li>
<li>750 g kinesisk selleri/kål</li>
<li>3 spsk. planteolie</li>
<li>1 liter varm kyllingelage</li>
<li>Kogte ris</li>
</ul>
<p>Læg svinekødet i en foodprocessor sammen med forårsløg, bambusskud, ingefær, halvdelen af saltet, peber, risvin, sojaolie og majsmel. Det hele skal blendes, indtil sammenblandingen er blød og pastaagtig, hvorefter man med let fugtige hænder kan forme massen til 4-5 store kødboller. De lægges herefter lidt til side.</p>
<p>Rengør kålen og opskær den i ca. 5 cm længde, hvor stilke og blade adskilles. Opvarm olien i en stor wok og steg kålstilke i ca. 3 minutter, kom derefter kålbladene i wok’en og giv det hele et kort opkog.</p>
<p>Læg halvdelen af kålen i en lerskål med låg, der kan tåle høj varme. Læg kødbollerne øverst og dæk portionen med resten af kålen. Hæld kødsuppe samt resten af saltet over portionen. Dæk til med låg og lad det hele stå og simre over et meget lavt blus i ca. 1 ½ time, indtil kødboller og kål er helt møre. Server retten i lerskålen med ris til.</p>

<p>Grydestegt bøf med tomat &#8211; (6 personer)</p>
<p>Her mødes øst og vest. Mør, grydestegt bøf med hvidløg, løg og tomater på spansk facon, hvor der tilsættes frisk ingefær og sojaolie, som giver et orientalsk præg i smagen. Serveres med hvide ris eller nudler.</p>
<ul>
<li>1 kg grydestegt oksekød</li>
<li>2 store løg</li>
<li>7 fed hvidløg</li>
<li>2 ½ spsk. smør</li>
<li>4 store, modne tomater</li>
<li>2 skiver frisk ingefær</li>
<li>2 spsk. mørk sojaolie</li>
<li>Salt og knust, sort peber</li>
<li>875 ml vand eller bøflage</li>
</ul>
<p>Udskær bøfkødet i mundvenlige størrelser. Pil løgene og udskær dem i tynde skiver, hvorefter det lægges sammen med hvidløg i smør og varmes lidt i ca. 3 minutter, indtil det hele er blødt og pænt i farven. Skub tingene til side på panden og steg bøfkødet, indtil det er pænt gennemstegt med en jævn farve på alle sider.</p>
<p>Udskær tomaterne groft; riv ingefæren. Læg det på panden og lad det hele simre, indtil tomaterne begynder at blive bløde. Hæld sojaolie, salt og peber over portionen og hæld vand eller bøflage på panden.</p>
<p>Lad det hele komme op til kogepunktet og skru derefter ned for varmen og lad det stå og simre i ca. 40 minutter, indtil kødet er blevet helt mørt.</p>

<p>Friturestegt ærteblomst i krustader &#8211; (Ca. 36 stk.)</p>
<p>Indiske vegetarer holder af varierede, velsmagende og fyldige retter. Protein fra mælk, smør og æg suppleres med en god portion tørrede bønner og ærter. Sædvanligvis anvendes mange grøntsager; retterne består ligeledes af mange forskellige krydderier og tilberedes som snacks, så de kan nydes dagen lang.<br />
Der findes mange former for Pakoras. Det kan være friturestegte krustader fremstillet af krydret dej af kikærter, som de nydes i det nordlige Indien fra fint udskårne grøntsager ompakket af en dej af grahamsmel og kikærter, som serveres i det centrale Indien til større grøntsagsstykker omrullet af en ærteblomstbaseret dej i det sydlige Indien. Uanset hvordan de tilberedes, er Pakoras én af de små smagfulde retter, som man næsten ikke kan lade være med at nyde. Retten kan serveres sammen med krydret chilisovs eller kokosnøddesovs eller myntechutney.</p>

KIKÆRTEDEJ</strong></p>

<li>315 ml vand</li>
<li>1 tsk. garam masala (karrykrydderi)</li>
<li>1 ½ tsk. knuste koriander</li>
<li>2 ½ tsk. chilipulver</li>
<li>¼ tsk. tørret, grøn mangopulver</li>
<li>¼ tsk. gurkemeje</li>
<li>2 tsk. salt</li>
<li>1 tsk. bagepulver</li>
<li>155 g grahamsmel</li>
<li>45 g hvedemel</li>
</ul>
<p>Skræl kartoflerne og skær dem ud i mindre stykker. Læg dem i en gryde med varmt vand, så vandet dækker kartoflerne og giv dem et opkog, derefter skal de bare simre lidt, indtil de er halvt gennemkogte. Udskær blomkål og broccoli i meget små bidder. Udskær auberginer og løg i mindre stykker. Skyl spinatbladene grundigt og udskær dem meget fint.</p>
<p>Bland ingredienserne til dejen og lad den stå og hvile i ca. 20 minutter. Når du er klar til at fortsætte sammenblandes grøntsagerne og spredes ud over dejen. Opvarm olien indtil det damper over stegepanden.</p>
<p>Læg nogle skefulde af dejen på stegepanden og lad det koge ved middelvarme, indtil dine Pakoras er pænt gyldenbrune. Fjern dem fra stegepanden med en hulske og læg dem på et fedtsugende underlag; hold dem varme, indtil alle Pakoras er tilberedt og server dem med det samme.</p>
